HEART-Beet Pancakes

Enjoy these anytime, not just Valentine’s Day! They are both delicious and nutritious!

  • 1/2 medium to large roasted and peeled beet
  • 2/3 cup almond milk
  • 1 large egg
  • 1 tablespoon melted butter or coconut oil
  • 1/3 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 2/3 cup quick oats (gluten free oats if needed)
  • 1 teaspoon baking powder
  • 1/2 banana
  • pinch of salt

Mix all ingredients in a blender and cook over medium heat. Use your favorite toppings and enjoy!

Pancakes de Remolacha

  • 1/2 remolacha, asado y pelado
  • 2/3 tazas leche de almendra sin azúcar
  • 1/3 taza yogurt Griego simple
  • 1 cdta extracto de vainilla puro
  • 2/3 taza hojuelas de avena integral enteras
  • 1 cdta polvo de hornear
  • 1/2 banano maduro
  • Pizca de sal

Coloque todos los ingredientes en una licuadora o procesador de alta potencia hasta mezclar bien. Cocine los panqueques a fuego medio. Utilice sus toppings favoritos y disfrute.
